Satisfyingly Simple Burger Bowl with Potatoes in under 15 minutes

I have a confession to make. I don’t eat bread. I haven’t for almost 2 years now! So when I make burgers I tend to not have the bun, so why not make it a little healthier by making it into a salad too! Now, this could be made in the Micro Pro Grill OR the Stack Cooker. I chose the Stack Cooker this time because hubby bought 73% lean burger, and we are eating out of the freezer! The Stack Cooker will allow the fat to naturally drain vs the Micro Pro Grill not having enough space on the sides for that! If you try this recipe please let us know what you think!

Pressure Cooker Chickpea Tomato Peanut Stew

My friend Michael Shane shared with me on how to make a One Pot Chickpea Tomato Peanut Stew. I liked the idea of it because I am in love with all things peanut butter right now and our daughter is a pescatarian. (Vegetarian who eats dairy and fish.) So having a meal that we could all eat together is a wonderful idea! Our twist on the idea is to use the Pressure Cooker instead of the stove top for this amazing dish!
