In honor or Cinco de Mayo today I wanted to share with you a healthy easy version of a family favorite Enchilada Casserole!
1 lb Ground Turkey
1 small onion, chopped using Chop n’ Chef
2 tsp Taco Seasoning of your choice (I love the Seasoning blend from Spice Islands I get from Costco!)
10 oz can Enchilada Sauce
6 – 6″ corn tortillas sliced into wedges
1/2 cup shredded cheese (I like Queso Fresco)
1. Place ground turkey, onion and taco seasoning in Colander of the Stack Cooker and place over 1-3/4 qt Casserole Stack Cooker. Cover and microwave on high power 5-6 minutes, staring halfway through.
2. Remove Colander. Drain and wipe out Casserole. Transfer cooked meat mixture to Casserole. Stir in sauce and fold in tortilla wedges and cheese.
3. Stack and microwave on high power for 15-20 minutes. Let rest 5 minutes. Serve warm and top with additional cheese if desired.
