Shrimp Scampi Zoodles
If you love shrimp and are looking for a healthy way to eat it this is the recipe for you! It is a family favorite of ours as our kiddos love the scampi flavors!
Prep: 5 Minutes | Cook: 9 Minutes | Servings: 3
- 1 large zucchini
- 1 pound peeled raw shrimp (not frozen)
- 1/2 cup cherry tomatoes (cut in half)
- 1 teaspoon Sriracha Sauce
- 2 cloves garlic (minced)
- 1 cup chicken broth (or veggie broth)
- 1 lemon squeezed
- 1/4 cup Parmesan cheese
- Salt and Pepper
Using the Fusion Master Spiralizer and spiralize the zucchini and place into the shallow colander of the Smart Multi-Cooker. Place the chopped cherry tomatoes with the zoodles.
Place the raw shrimp into the shielded colander of the Smart Multi Cooker. Salt and Pepper.
In the base of the Smart Multi Cooker, add the 1 cup chicken broth, lemon juice and 2 cloves minced garlic. Stack all three items and cover. Microwave on high for 9 minutes. Let stand for 3 minutes.
In bowl, lightly toss zoodles, tomatoes and add sriracha sauce. Add in shrimp. Serve warm. Top with pinch of Parmesan cheese and chopped green onion.
