Stacked cook meal and dessert FAST

Joanna does an amazing job sharing how to make a meal and dessert FAST with the Stack Cooker. It is mouthwatering and simple and sure to be a hit at home! In the Cover you will make Herbed Potatoes, the 1-1/4 qt Casserole Stack Cooker Spinach Stuffed Chicken and 3 qt Casserole Stack Cooker Lemon and Garlic Broccoli!

Tupperware needed: Tupperware Stack Cooker, Spatula, Power Chef with Whipping attachment, Measuring cups and Spoons, Micro Pitcher, Mandoline or Chef Knife, Zest n Press

The Cover of the Stack Cooker: Herbed Pototoes

Ingredients:

  • 12 oz medium baked potatoes, sliced 1/4″ thick using the Mandoline or Chef Knife
  • 1 Small Onion, thinly sliced with Chef Knife
  • 2-4 tbsp water
  • 1 tbsp butter, melted
  • 1/2 tsp dried basil, oregano or tarragon crushed

Directions:

  1. Place potatoes in the inverted Stack Cooker 3/4 qt Casserole Cover, placing smaller pieces towards the center, cover with onions.
  2. Combine butter, water, and seasoning and pour over potatoes
  3. If cooking individually place in microwave and cook on high for 10-12 minutes and let stand for 5 minutes before serving
  4. If stacked cook, then see timing for cooking all 3 after the last recipe

1-3/4 qt Stack Cooker Casserole – Spinach Stuffed Chicken

Ingredients:

  • 4 Chicken Breasts
  • 1 tsp paprika
  • 1 tsp salt divide
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 4 oz cream cheese softened
  • 1/4 cup grated parmesan
  • 2 tbsp mayonnaise
  • 1-1/2 cups chopped fresh spinach
  • 1 tsp garlic, minced
  • 1/2 tsp red pepper flakes
  • 1 Tbsp olive oil

Directions:

  1. Place chicken breasts on a cutting board. Use a Chef Knife to cut a pocket into the side of each chicken breast
  2. Add the paprika, 1/2 tsp salt, garlic powder, and onion powder to a small bowl and stir to combine. Sprinkle evenly over both sides of the chicken.
  3. Add cream cheese, Parmesan, mayonnaise, spinach, garlic, red pepper and remaining 1/2 tsp of salt to a small mixing bowl and stir well to combine. Spoon the spinach mixture into each chicken breast evenly and place in the 1-3/4 qt Casserole. Drizzle with Olive Oil
  4. If cooking individually, place in microwave and cook on high for 8-10 minutes
  5. If cooking as stacked cooked then see timing for cooking all 3 after the last recipe
  6. Let stand for 5 minutes

3 qt Stack Cooker Casserole – Garlic & Lemon Broccoli

Ingredients:

  • 1 (2 lb) head of broccoli, cut into florets, stems sliced
  • 2 cloves garlic, minced
  • 1/4 cup water
  • 1 lemon, juiced and zested
  • 1 tbsp butter melted

Directions

  1. Place broccoli, garlic and water in the Stack Cooker 3 qt
  2. If cooking individually place in microwave and cook for 10-12 mintues

If cooking all 3 together in a Stack Cooked Meal – stack all 3 together with cover on top and cook on high for 10-15 minutes and let stand for 5 minutes
