Sunday Morning Egg Bake

Well lets start with you really could have this egg bake on a Monday, Tuesday, Wednesday…you get the drift! We just happened to have made it on a Sunday!! It was one of those mornings where Rich just decides to throw things in a pan and see what happens! Don’t you just love those kind of mornings?? If you try it out let us know your thoughts! It was super yummy and for those doing Weight Watchers only 4 points!

Side note, you could also add peppers to this recipe for 0 points. We just didn’t have any in the house!

What you need: Ultra Pro Square, Impressions Large Bowl, Whisk, Grate Master Shredder, Chop n Prep, Spatula, Measuring Cups

Prep Time: 5 Minutes

Total Cooking time using tandem cooking: 21 minutes

Serves 9

Ingredients

  • 10 eggs whisked together
  • 1 bag of Simply Potatoes Shredded Hash Browns
  • 1 cup Colby or Cheddar Cheese Shredded with Grate Master Shredder
  • 1 tsp Garlic Powder
  • 1/2 raw onion

Directions

1.Preheat oven to 375 for part of the cooking time that will be done.

Whisk all the eggs in the Large Impressions Bowl. Then Add the Shredded Cheese and Garlic Powder to the eggs.

Chop up onion using the Chop n Prep to a fine cut and add it to the egg mixture.

Place all the Simply Potatoes Shredded Hash Browns in the Square Ultra Pro (Do not grease it…there is no need!) Pour egg Mixture over the potatoes. Tip: Use your Spatula to be sure that the egg gets to the bottom for even cooking.

Microwave the egg bake for 7 minutes on High. Then Bake for 14 minutes at 375 degrees for it to brown

Note: Could cook it completely in Microwave in 12-14 minutes and it would not be browned. If using a conventional oven 40-45 minutes at 375 degrees

We made ours without meat because we have a Pescatarian in the house! We added bacon to ours 1-1/2 tbsp of bacon cooked crisp and no added points were needed! If you like this recipe please feel free to drop a comment! Feel free to share!
