Fiesta Ranch Party Dip

This dip must come with a warning…you will become addicted to it! (Don’t say I didn’t warn you!!) My friend Heidi shared this recipe with me and ever since it is now a family favorite! Also for those of you doing Weight Watchers it is also Zero points! Pair it with veggies instead of chips for a Zero point snack too! This is a dump and go kinda dip so the measurements are not precise as a heads up!

Fiesta Ranch Party Dip

Ingredients:

-About 1/2 a container of Cholani Non Fat Greek Yogurt

-1/2 a can of Black Beans Rinsed

-1/2 a Bell Pepper (Red, Yellow or Green or all of the above!)

-1/2 cup to 1 cup of Frozen Sweet Corn thawed

-1/4-1/2 cup red onion

-1 package Fiesta Ranch Dip powder mix

In your Power Chef or Chop n Prep put in the red onion and bell peppers to chop up fine. Then, transfer to a Clearly Elegant bowl that has the Yogurt, Fiesta Ranch dip mix, black beans, corn. Stir to combine and let sit for at least an hour before eating.

I thought it would be good on corn tortillas. I then realized I do not like corn tortillas! (Tip from my friend Nicole warm them up first so that they are yummy! Using the Micro Pro Grill for a few minutes is amazing!)

Found out that it tastes great on the chips though too!

To make the eggs take 12 eggs in a our Smart Multi Cooker or Smart Steamer.
1) Steam it for 12 minutes
2) Let sit for 6 minutes with the shielded cover on
3) Then place them in a cold water bath!
4) They will peal easily to be added to your favorite salads, sandwiches or in this case on top of dip with a chip!
