Spinach-Arugula Pesto & Zoodles
Prep: 15 Minutes | Cook: 1 Minute | Servings: 2
- 2 Large Zuccini
- 1 garlic clove
- 1/4 cup slivered almonds
- 3 cups fresh baby spinach
- 2 cups packed arugula
- 1 lemon
- 1/2 cup Parmesan cheese
- 1/2 cup extra virgin olive oil
- salt and pepper
Using the Fusion Master Spiralizer with the large “noodle” size, spiralize both zucchini and set in bowl.
Using Quick Chef Pro, add garlic and almonds and mince. Add spinach, arugula, lemon juice and Parmesan cheese. Chop until finely minced. Slowly add in olive oil. Add salt and pepper.
Using Smart Multi-Cooker, add zoodles to colander. Add water to base and cook for 2 minutes on high. (You can also use the stack cooker.)
In large bowl, toss pesto and zoodles until well coated. Serve warm or cold.
