Spinach-Arugula Pesto Zoodles

Do you like Zoodles…would you like another way to have them? This Spinach, Arugula and Pesto recipe may be just what you are searching for!

Prep: 15 Minutes | Cook: 1 Minute | Servings: 2

  • 2 Large Zuccini
  • 1 garlic clove
  • 1/4 cup slivered almonds
  • 3 cups fresh baby spinach
  • 2 cups packed arugula
  • 1 lemon
  • 1/2 cup Parmesan cheese
  • 1/2 cup extra virgin olive oil
  • salt and pepper

Using the Fusion Master Spiralizer with the large “noodle” size, spiralize both zucchini and set in bowl.

Using Power Chef or Chop n Prep, add garlic and almonds and mince. Add spinach, arugula, lemon juice and Parmesan cheese. Chop until finely minced. Slowly add in olive oil. Add salt and pepper.

Using Smart Multi-Cooker, add zoodles to colander. Add water to base and cook for 2 minutes on high. (You can also use the stack cooker.)

In large bowl, toss pesto and zoodles until well coated. Serve warm or cold.
