Pork and Green Pepper Stir Fry

Sometimes you just are in the mood for a Stir Fry! Normally we would have this with Chicken, but we had pork in the house! I was pleasantly surprised by it all as well! We hope you will be too! (PS if you don’t like pork you can always substitute with your favorite protein too!)

Prep: 5 Minutes | Cook: 14 Minutes | Servings: 6

  • 1 1/2 pound pork shoulder
  • 3 green bell peppers
  • 3 scallions
  • 4 tablespoons butter
  • 1 1/2 teaspoon chili paste
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 3 tablespoons almonds

Cut port shoulder in thin slices. Trim any excess fat.

Place pork shoulder and 2 tablespoons butter and into 3 quart base of Stack Cooker.

Place green peppers, scallions, 2 tablespoons butter, chili paste into 1 3/4 quart Stack Cooker and place on top of 3 quart base.

Cover and cook for 10 minutes.

Remove 1 3/4 quart base with veggies and set aside. Mix pork mixture, cover and cook an additional 4 minutes.

While pork is cooking, chop almonds in Power Chef or Chop n Prep and mix with veggies.

Drain meat, mix veggies and almond mixture and serve warm.
